Serves 2-3

Ingredients

  • 1/2 cup non-dairy milk

  • 1 ripe banana, mashed

  • 2 eggs whites, or full eggs

  • 1 scoop vanilla protein powder or almond flour

  • 1 cup rolled oats

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1 pinch of salt

  • 1 tablespoon coconut oil

  • 1 teaspoon vanilla

Instructions

1. Mix ingredients together in a blender.

2. Heat skillet or griddle over medium heat and lightly coat with coconut oil.

3. Pour pancake batter in the pan to form a small-medium circle sized pancakes. Cook for 2 minutes or until small bubbles begin to form on top. Flip and cook for another 2 minutes or until lightly brown and set through.

4. Repeat until you have used all the batter.

5. Serve with 100% maple syrup or your favorite pancake toppings and enjoy!

Notes

  • Serve warm with fresh fruit, maple syrup, walnut/pecans or you can eat them plain. They are delicious. Enjoy!
