Ingredients
1 Large egg
1 Slice of Whole Wheat, Gluten Free, Sour Dough Bread, toasted
1 cup spinach, sauteed
1 tablespoon olive oil
1 tablespoon butter
Instructions
1. Toast 1 slice of bread.
2. Heat olive oil in medium size skillet over medium heat.
3. Add spinach to the skillet and cover, allow to cook for about 10 minutes.. Then cover and remove from heat.
4. Meanwhile, heat butter in a second skillet over medium-low heat.
5. When the butter has melted and begins to bubble, gently crack the egg into the butter, being careful not to break the yolk.
6. Cook for 1-2 minutes, until the white is opaque and yolk has set.
7. Top toast with spinach and sunny side up egg.
Notes
Optional: Sprinkle some salt and pepper or any other spices or herbs.
